Spaghetti with meatballs * * * Spaghetti con le polpette

Ingredients for the meatballs:
- 50 gr of minced Mortadella Bologna
- 1 medium egg
- 100 gr of minced pork meat
- 100 gr of sausage
- 2 tablespoons of chopped parsley
- 50 gr of grated Parmesan cheese
- 30 gr of breadcrumbs
- nutmeg powder
- Black pepper
- all-purpose flour
Combine Mortadella Bologna, minced pork and minced sausage with all the other ingredients in a large bowl, then add pepper. Shape into meatballs, the mixture should be very moist but still hold its shape if rolled.
Dredge the meatballs in the flour and let them rest for a few minutes, the time necessary to prepare our tomato sauce.
Ingredients fot the tomato sauce:
- 750 ml of tomato puree
- ½ onion
- 1 garlic clove
- 3-4 tablespoons of extra virgin olive oil
- 350 gr of spaghetti
Heat extra-virgin olive oil in a large skillet over medium heat. Add onion, garlic and salt, add the tomato puree and cook until almost all the liquid evaporates.
Now add the meatballs to the tomato sauce and let it cook for 10/15 minutes.
Meanwhile bring salted water to a boil for the spaghetti. Cook the pasta, stirring occasionally, for about 8 minutes.
Drain the pasta and return it to the pot. Spoon in the tomato sauce with meatballs, let it cook for a few minutes then remove from the heat and toss in grated Parmesan cheese. Check the seasoning and add salt and pepper if necessary.
