Spaghetti cacio and pepe

Ingredients (serving 4):

  • 400 gr (14.10 oz) spaghetti
  • 170 gr (6 oz) Pecorino romano cheese freshly grated
  • 2 teaspoons freshly cracked black pepper

Bring water to a boil then season it with salt; add pasta and cook, stirring occasionally, until al dente.

Drain, reserving 3/4 cup pasta cooking water.

Meanwhile melt 3/4 cups pasta cooking water in a large skillet with pecorino until creamy.

pecorino grattuggiato 2  +  pepe nero frantumato     =    cacio e pepe mescolo

Add spaghetti and pepper stirring and tossing until sauce coats the pasta.
