Roman-style chicken * * * Pollo alla romana

  • 4 skinless chicken thighs
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 6 tablespoons tomato juice
  • 1 small onion
  • 1/4 cup extra virgin oil
  • salt
  • pepper

Season the chicken with salt and pepper. In a heavy, large skillet, heat the olive oil over medium heat. When the oil is hot, cook the chicken until browned on both sides. Remove from the pan and set aside.

Wash and dry all of the peppers. Cut off the tops,remove seeds and membranes and slice into 1/2 inch strips.
Heat the olive oil in a large, heavy pan, and add the onions, garlic and pepper, and cook for about 10 minutes on medium low heat until th vegetables have taken on some color; stir frequently.
Add the tomatoes, and reduce heat to a simmer, then season with salt and pepper and cook for an additional 20 minutes or so until tender crisp, adding a little water if the mixture seems to be drying out too much.

Finally return the chicken to the pan, add the stock, and bring the mixture to a boil for about 10 minutes.
