Cod livornese

Ingredients (serving 3/4):

  • 800 gr (28.21 oz) clean cod
  • 2/3 garlic gloves finely chopped
  • 4 tablespoons extra virgin olive oil
  • 30 gr (1.05 gr) capers
  • 80 gr (2.82 oz) black olives
  • fresh parsley leaves
  • 1 glass white wine
  • 1 can diced tomatoes, undrained
  • salt
  • pepper

In large skillet, heat oil. Add garlic and saute for 1 minute.

Add fish filets and let it cook for a couple of minutes, then add capers and olives and last white wine and wait until evaporated, then cook for a minute.

Add diced tomatoes, cover and cook over medium heat 8 to 9 minutes or until fish filets are opaque.

Seasin with salt and pepper, then garnish with fresh parsley leaves. Serve hot.
