Carciofi alla siciliana * * * Sicilian style artichokes
- 8 artichokes
- 4 can anchovies
- 50 gr fresh breadcrumbs
- 10 gr fresh parsley leaves minced
- 3 tablespoons extra virgin olive oil
- 1 garlic glove finely chopped
- 1 lemon
- 1 tablespoon capers
Clean the artichokes by removing the outer leaves until you reach the yellow light gree part of it. Cut the top part of the leaves, trim the stem end and any dark parts around the bottom.
Clean all the artichokes and keep them in water with fresh lemon juice for about 10 minutes.
In a bowl mix well breadcrumbs, garlic glove, anchovies, capers and parsley. Sprinkle with salt and pepper, then spread over each artichoke.
Put 4 tablesppons of extra virgin olive oil in a cast iron pad and lay the artichokes and cook for about 30 minutes, adding warm water if necessary. Serve hot.
