Stuffed calamari

Ingredients:

  • 800 gr (28.21 oz) cleaned calamari
  • 1 tablespoon capers
  • 350 gr (12.34 oz) crushed tomatoes
  • 4 tablespoons extra virgin olive oil
  • 3 tablespoons bread crumbs
  • 80 gr (2.82 oz) black olives
  • 50 gr (1.76 oz) fresh parsley leaves chopped
  • 2 garlic gloves
  • 1 tablespoon dried oregano
  • salt
  • pepper

Heat 2 tablespoons oil and cook chopped tentacles for a couple of minutes.

In a large bowl mix bread crumbs, olives, capers and 1 garlic glove finely sliced, then add the mixture to the tentacles and cook until brown and well mixed. Add oregano, parsley, salt and pepper.

Set sauce aside until warm, then stuff each calamari body with mixture. Leave a finger space inside, as mixture will expand when cooking.

(Optional: Use a toothpick to attach and close calamari – remember to remove it before serving). Set aside.

Heat 2 tablespoons extravirgin olive oil in a saucepan over medium heat. Add garlic and tomatoes.

Cook tomato sauce for a couple of minutes, then gently transfer filled calamari for about 20 minutes.
